Tips for Baking Perfect Scones
Keep your ingredients cold: Cold butter and cold milk or cream are key to flaky, tender scones. If the butter melts before baking, you’ll lose that lovely crumbly texture. You can even pop your flour in the fridge for 10 minutes before mixing!
Handle the dough gently: Overmixing makes scones tough. Mix just until the dough comes together — a few lumps are okay. When shaping the dough, press it together lightly rather than kneading.
Use a sharp cutter: If you're cutting your scones into rounds, use a sharp biscuit cutter and press straight down without twisting. Twisting seals the edges and prevents a nice even rise.
Chill before baking (optional but helpful): Once shaped, you can refrigerate the scones for 10–15 minutes before baking. This helps firm up the butter again and improves the texture.
